TENOCH is a Michelin-recognized destination restaurant situated within Paradero Todos Santos. Created by visionary hoteliers &restaurateurs Josh Kremer and Pablo Carmona, its menu passionately showcases modern Mexican cuisine with Japanese influences. Deeplyinvolved in every aspect of the culinary experience, Kremer and Carmona ensure the highest level of quality by conducting seasonality mapping, and hand picking high quality seafood, livestock, vegetable and fruit, wine, coffee, beer suppliers and foraging practices through the multi-ecosystems of Baja California
Their menu focuses on showcasing the carefully selected produce and presented in a minimalist way, without the need of extensive decorating or garnishing. TENOCH uses fire-based cooking in most dishes, utilizing a Spanish Josper oven, Hibachi Japanese grill and Mexican clay comal, where nixtamalized heirloom corn is used to make fresh tortillas. Signature dishes include line-caught Kampachi from La Paz with Habanero Kosho mayonnaise and grilled avocado, and organic farm chicken from La Paz that is air dried (similar to Chinese Peking duck),roasted and grilled finished in a Hibachi grill
